Crostini Appetizer For Wednesday

Crostini is a medieval Italian appetizer, whose popularity has lasted to this day. This appetizer came around the medieval time and its popularity was because of the easiness it was served, just like bruschetta, another finger food and antipasto. Crostini means little toast, it can be served with infinite ingredients. Serve with a chill merlot (that’s how I love to eat it) before diner…. There’s nothing better. This is a recipe I came out with, so here it is:

1 cup of mushrooms (Portobello)
1 yellow pepper, cut into ribbons
1 red pepper, cut into ribbons
Half of a white sweet onion, cut into ribbons
Salt and black pepper
1 French baguette
¾ cup of olive oil

Preheat oven at 350 degree. Cut baguette in half and then in little square. Brush the little squares of bread with olive oil and put in the oven for about 7 minutes. If there is anything left of the oil, use it to sauté the vegetables. The first thing is to heat oil, and then sauté mushrooms, season with salt and pepper, for about 5 minutes and the add onion and peppers and remember season as you go. When finished just top the toasted bread with the vegetables. Serve however you want to. I hope you enjoy .
