Honey Chicken Wings

Honey Chicken Wings

4 pounds chicken wings
¼ Cup extra-virgin olive oil
Salt and freshly ground pepper
¼ Cup vinegar
1 teaspoon crushed red pepper
1/2 cup Maple syrup
2 tablespoons soy sauce
2 scallions, slices

Heat the broiler. In a bowl season the chicken wings with the olive oil, salt and pepper.  Broil for 45 minutes; turn periodically until the wings are crispy and well cooked in both sides. Meanwhile, in a small pot, combine the vinegar and crushed red pepper and boil for about 2 minutes. Cool the wings and combine the soy sauce and maple syrup (note: in the original recipe which I found in the Food and Wine magazine, the recipe call for honey but I prefer to use maple because it isn’t as heavy). Then cover the wings with the mixture. Transfer the wings to a dish and add the scallions and serve. I serve this dish with French fries.
