Panini For a Fullfilling Dinner

One of my favorite foods is Panini; I love Panini. Panini is basically a grilled sandwich with either poultry(most of the time) or meat and cheese and herbs such as basil. It is a very fulfilling sandwich and it can be accompanied with a salad or fries or whatever you have in mind. Here is my recipe for Basil pesto Panini:


French Baguette (1)
Bunch of Watercress, clean( I love watercress it gives a earthy flavor to it)
Mozzarella, in slices
1 big chicken, grilled and sliced
1 tomato, thinly slices

Pesto

About a cup of fresh basil
Salt and pepper to taste
3 tablespoon of olive oil
½ cup of Parmesan

For the pesto
In a food processor, combine all the ingredients and processed until the ingredients look like a paste.
For the Panini
Cut baguette and spread pesto sauce in both sides.
Then aggregate and layer (in the bottom side of bread) the slices of grilled chicken, mozzarella, tomatoes and watercress. Top with the topside of the baguette and grill in a Panini maker or use a griller pan. Ta.. da here you have it!!!!

Wednesday Dessert

Bread Pudding

3 to 4 cups of bread
4 ½ cups of evaporate milk
3 eggs
½ teaspoon of cinnamon in powder
½ teaspoon of clover in powder
½ teaspoon of ginger in powder
½ cup of butter
1 cup of brown sugar
½ cup of raisins
¼ cup of water
½ teaspoon of salt

1.     Take one cup of milk and mix with the 3 eggs, reserve for later
2.     Take about ¼ cup of sugar and ¼ of water and place in a saucepan over a medium heat; let the sugar dissolves until it looks like syrup. Cover the baking dish with syrup mixture before it gets cold.
3.     Put the remaining milk into a pot to boil and add cinnamon, clover, ginger, salt and what’s left of the sugar and salt. When boiling add butter, raisin, and bread.
4.     Make sure the bread is cooked, let it cool.
5.     When cool add the egg mixture to the bread mixture and place in the baking dish. Bake for about 40 to 45 minutes in a 375-Fahrenheit degree oven.
Bread pudding is a favorite in my family and I like to do it once in a while. Here is the recipe and hope you like it.

Breakfast Biscuit

Biscuit Perfect for Breakfast

2 1/2 Cup all-purpose flour
2 1/2 Teaspoons baking powder
½ Teaspoon salt
1 Tablespoon honey
½ Cup cold butter, cut into pieces
3/4 Cup milk
1 Large egg, beaten              
1 Tablespoon of vegetable oil mix with 1 tablespoon of milk
Mix the dry ingredients, flour, baking powder, and salt. Cut butter into flour with a fork if you don’t have a dough blender. Meanwhile blend milk, egg, and honey and add to the dry ingredients. Knead dough for about 2 minutes, next cut out biscuit and cover with the mixture of vegetable oil and milk.

Banana Bread



Banana Bread
Banana bread is fairly recent recipe in the American kitchen. Banana bread first appeared in the 1930s. It became popular because housewives did not want to throw away overripe bananas.

In my family it is one of our favorite desert and we are frequently make it.







2 to 3 smashed ripe bananas
1/3 cup of melted butter
3/4 cup of brown sugar
1 large beaten egg
1 teaspoon of vanilla
1 pinch of salt
1 1/2 cup of all purpose flour
1 teaspoon of baking soda

Preheat the oven at 350 degree Fahrenheit

Take the smashed bananas, melted butter, beaten eggs, vanilla and lastly the brown sugar and mix it with a hand mixer. Then add the pinch of salt and baking soda mix again thoroughly. Finally, add the all purpose flour slowly and mix it well enough there isn't loops of flour in the mixture.  Pour the mixture into a buttered 4x8 inches pan. Bake for 45 minutes. Cool  and serve with whatever you want.
