Cracked Corn Pudding |
This is a dessert, which is a typical dish in the island
where I come. This is a symbol of
tradition and family. Hope you’ll enjoy.
1 cups of cracked corn
4 cups whole milk
1 cup of brown sugar
4 cinnamon sticks
1 tablespoon of cloves
1 teaspoon of salt
Soak on water corn overnight. Cook for about 25 minutes in
pressure cooker; make sure corn is soft and well cooked. In a strong pot,
combine corn, 4 cups of water you cooked the corn, milk, cinnamon and cloves.
Cook over low-medium heat until it’s reduced to half. Add salt and sugar and
let it cook for another 10 minutes. You can serve at room temperature or cold.
